Need a food idea for your next game night? Try out these Jalapeno Poppers.
Ingredients:
6 whole Jalapenos (medium to large size)
8 ounces Cream Cheese (room temp)
8 ounces Shredded Cheddar Cheese (we used sharp cheddar cheese)
2 Green Onions (diced)
Your favorite BBQ sweet rub or seasoning (we used Heath Riles Sweet BBQ Rub)
1 tablespoon of BBQ sweet rub or seasoning for cheese mix and more for topping
12 slices of Bacon (we used center cut)
Preheat your grill to 375-400 degrees F using two-zone heat. This means one zone of your grill has the fire directly under the grates (direct heat side) and the other zone does not have the fire directly under the grates (indirect heat side).
In a bowl, combine the softened cream cheese, diced green onions, 1 tablespoon of sweet BBQ rub or seasoning and cheddar cheese. Set aside.
Slice the jalapenos in half. Scrape out the seeds and ribs of the jalapenos with a spoon or knife.
Fill jalapeno halves with the cheese mixture. Don't overfill. Otherwise, the cheese mixture might bubble out during cooking.
Wrap each stuffed jalapeno with a slice of bacon and secure with two toothpicks to avoid the Jalapeno Poppers falling apart during grilling.
Sprinkle the tops of each Jalapeno Popper liberally with the sweet rub or seasoning.
Place the Jalapeno Poppers on the indirect heat side of your grill and allow them to cook with the lid closed for 20-25 minutes. Once the Jalapeno Poppers are cooked through and most of the fat is rendered from the bacon, remove and enjoy.
Notes:
- Wash hands thoroughly after handling jalapeno peppers or wear gloves to avoid direct contact.
- For a spicier experience, leave some of the seeds and ribs in the jalapenos.
- For crisper bacon, move the Jalapeno Poppers closer to the direct heat side of your grill when done for an extra 2-3 minutes.
- The Jalapeno Poppers can be cooked in the oven or air fryer. Oven - 375 degrees F (lined baking pan) for 20-25 minutes.
- Air Fryer - 350 degrees F (don't stack) for 15-20 minutes
- The Jalapeno Poppers can also be topped with your favorite BBQ sauce.
